Kabura-sushi,but not "sushi".It's special samurai food in new year.

 When we ask the foreigners about your favorite Japanese foods,they will answer "Susi". Please left the left side pic.This is "Kabura-sushi",but not "Sushi"."Kabura-sushi" is classified into pickled turnips.This was a special food for the lord of Kaga domain,present Ishikawa pref and a part of Toyama pref.Now the people of this district make it in winter and eat it in New year.
"Toyama bay" surrounded with Toyama pref and Noto peninsula of Ishikawa pref is famous for the fisheries of yellowtail in winter.In Japan,especially,the yellowtail fished in Toyama bay is the highest grade.Now days we enjoy its taste as "sashimi" ,sliced raw fish or "shabushabu", boiled raw slice at the pot.

 "Kabura-sushi" is souced the turnips inserted sliced raw of yellowtails in "Kouji",kouji mold for about 2-3 weeks. In the wester part of Toyama pref they use the mackerels in stead of the yellowtails.The taste of "Kabura-sushi" is sweet-and-sour.To make this pickle at home is very difficult,so many people buy this at the department or the specialty store for it.
Anyway I recommend this pickles to foreign tourists.
The shop of long standing of "Kabura-sushi"  in Kanazawa city is "Shijimayahonpo".The price is about 1000yen per price.Please enjoy this traditional food in this area, it is just samurai foods.
